Born in 2000 in Fontainhas, Goa, Noah Rodriguez grew up surrounded by the sounds, aromas, traditions, and communal kitchens of Goan life. His grandparents, Maria and Paulu, became his first teachers. Maria taught him to trust intuition, aroma, texture, and the knowledge carried through generations of home cooking, while Paulu, a retired baker, taught him patience, heat, fermentation, and the subtle sounds of a working kitchen.
His parents gave those instincts structure. His father, Adrian, a restoration architect, taught him documentation, history, and evidence; his mother, Elena, a human-rights lawyer, taught him that every ingredient carries the story of a person, community, and culture.
At 14, Noah began making simple YouTube documentaries about food. Instead of chasing famous restaurants, he travelled through villages, dhabas, markets, religious kitchens, homes, bakeries, and open kitchens, learning local languages and documenting techniques directly from the people who practiced them.
His curiosity eventually led him into formal culinary and historical education, followed by advanced study in sensory and visual perception of food. He trained under chefs, professors, home cooks, and culinary traditions across the world.
Today, Noah is a globally respected sensory food critic, culinary scholar, food historian, educator, and gastronomic documentarian. He travels wherever there is something to learn, believing his greatest responsibility is not to judge food—but to understand it before judging it, and preserve the human knowledge behind it.
